Serves 4 people Approximate
Time: 10 mins.
450g (1lb) beef steak, cut into strips
1 yellow pepper, cut into strips
2 large red chillies, deseeded and cut into strips
150g (5oz) grated cheddar cheese
2 tbsp. vegetable
1 green pepper, cut into strips
1 onion, sliced into 8 wedges
150 ml (¼ pint) fresh soured cream
- Preheat the oven to 150°C/300°F/Gas
- Wrap the flour tortillas in
foil and place in the oven to warm through.
- Heat the oil in a griddle pan
or large frying pan. Add beef strips and fry for 4 mins. Set aside and
keep hot. Add chopped vegetables, fry for 5 mins. until tender and slightly
charred. You may need to do this in batches.
- Remove the tortillas from the
oven. Serve the beef, charred vegetables, soured cream and cheese alongside
the tortillas, and allow people to roll up their own tortilla.

(1lb) strawberries, hulled
Rind of 1 lemon
250g (8oz) clotted cream
(2oz) icing sugar
110g (4oz) all butter shortbread
Mint sprigs, to decorate
Place the strawberries,
icing sugar and lemon rind in a food processor and whizz to a coarse pulp.
Place the biscuits
in a food bag and lightly crush using a rolling pin.
Spoon a layer
of the strawberry compôte into the bottom of a glass. Top with the
clotted cream and a sprinkling of crushed biscuits.
