Manic Monday Meals

Warm Chicken Noodle Salad

Serves 4 people Approximate Time: 30 mins.
125g (4½oz) egg noodles
2 tbsp. sweet chilli sauce
2 tbsp. soy sauce
85g bag of watercress
2 cooked chicken breasts, shredded

75g (3oz) asparagus tips, halved
2 tbsp. rice vinegar
Juice of 1 lime
1 small red pepper, sliced
1 tbsp. sesame seeds, toasted


  1. Bring a pan of water to the boil and drop in the noodles. Leave to cook according to the packet. In the last minute, add the asparagus. Drain well, then place in a warmed serving bowl.
  2. Meanwhile mix together the sweet chilli sauce, rice vinegar, soy sauce and lime juice. Thoroughly toss this through the noodles.
  3. Stir in the watercress, red pepper and shredded chicken. Then sprinkle over the sesame seeds. Serve immediately.

Serves 4-6 people  
500g (1lb) fresh or frozen raspberries
300ml (½ pint) double cream
60g (2 oz) oatmeal
3 tbsp. Scotch whisky
4 tbsp. heather or clear honey


  1. Reserve 175g (6 oz) of the raspberries and put the rest into a bowl with the Scotch whisky. Set aside.
  2. Whip the cream until softly stiff.
  3. Stir in the honey and oatmeal. If the cream turns soft, whip again until stiff.
  4. Spoon a few raspberries into the bottom of each serving glass, or spoon half the raspberries into the bottom of a large glass bowl.
  5. Spoon half the cream mixture over the raspberries, then add the remaining raspberries.
  6. Spoon the remaining cream over the top. Chill for at least one hour, preferably overnight.
  7. Mash the reserved raspberries with a wooden spoon, or blend them in a blender or food processor. Press them through a sieve.
  8. When ready to serve, pour a little of the sieved raspberries over each glass or over the whole bowl.
