Manic Monday Meals

Cheat's Tikka Masala

Serves 4 people Approximate Time: 20 mins.
25g (1oz) butter
295g (10½oz) can of condensed tomato soup
3 tbsp. Tikka paste

500g (1lb 2oz) chicken breast fillets, cubed
150ml (¼ pint) fresh milk
2 tbsp. coriander leaves, chopped



  1. Melt the butter in a frying pan and gently stir-fry the chicken for 5 minutes until the chicken is cooked through.
  2. Stir in the soup, milk and tikka paste and simmer for 10 minutes, stirring occasionally. Pile into a serving dish and top with the chopped coriander. Serve with rice or Indian breads.

    As an alternative, try other meats e.g. turkey or pork

Fruit Kebabs with White Chocolate Sauce

Serves 4 people Approximate Time: 25 mins.
150g (5oz) bar of white chocolate
1 mango, peeled, stoned and cubed
2 Sharon fruits, stalks removed and cut into wedges
50g (2oz) gooseberries (optional)
300ml (½ pint) creamy fromage frais
3 kiwi fruits, peeled and cut into wedges
250ml (8oz) strawberries, washed and hulled


  1. Melt the chocolate in a bowl over a pan of simmering water. Remove from heat and cool slightly.
  2. Stir in fromage frais and beat mixture until thick and creamy. Pour into a serving dish and chill for 10 minutes.
  3. Arrange fruits on a serving dish, with a bundle of cocktail sticks, and serve with the dipping chocolate sauce.

As an alternative, use milk or plain chocolate but you may find that you do not need to add as much fromage frais to get a coating consistency.
