Wednesday Whizz

Bœuf (Beef) Stroganoff

Serves 4-6 people Approximate Time: 15 mins.
1kg (2lb) rump or fillet steak
2 onions, thinly sliced
100g (4oz) butter

50g (2lb) seasoned flour
200g (8oz) button mushrooms, thinly sliced
Grated nutmeg
250ml (½ pint) sour cream


  1. Cut meat into 6 x 25 mm (¼ x 1 in) and toss in seasoned flour.
  2. Fry thinly sliced onion and button mushrooms in butter for 2-3 mins. Add the meat and fry for a further 5 to 6 mins.
  3. Add the nutmeg and sour cream and heat mixture through. Do not allow to boil. Adjust seasoning.




Boozy Peaches

Serves 4 people Approximate Time: 25 mins

4 peaches, fresh or tinned
75g (3oz) caster sugar
Juice of 1 lemon
3 tbsp. orange-flavoured liqueur

25g (1oz) butter
Grated rind and juice of 2 oranges
50g (2oz) almonds, chopped


  1. Halve and stone peaches.
  2. Put butten, sugar, orange rind and juice and lemon juice in a pan and heat gently, until sugar dissolves.
  3. Add almonds and peaches and bring to boil. Simmer for 5 minutes, basting occasionally, until peaches are tender.
  4. Add liqueur, remove from heat and set alight.
  5. Wait until flames die down, stir gently to mix, then serve.
